David's Made-With-Love Lunch for me

David surprised me with lunch at his mom's house at Christmas. Christmas is a tough time to stay healthy, especially when your trying to stay "Plant-Strong"! (See Forks Over Knives link to get Plant Strong def. http://www.forksoverknives.com/what-to-eat/ )

He gifted me with a Green Salad and Baked Sweet Potato Fries :)

SWEET POTATO FRIES:

INGREDIENTS:

1 sweet potato, peeled and cut into fry shape

Thyme

Rosemary

Vegetable Stock

Salt and Pepper

Preheat oven to 325. Line a cookie sheet with parchment paper and spray lightly with oil. Place fries on parchment paper so they do not touch. Sprinkle thyme, rosemary, salt and pepper to taste. Pour vegetable stock onto cookie sheet until it just covers the bottom of sheet.

Place, carefully, in oven and cook until tender, about 40 minutes.

Switch oven to broil and brown fries. When browned to your taste they are done!

GREEN SALAD:

INGREDIENTS:

2 handfuls of Spinach Kale mix

1/4 of a bunch of Cilantro, roughly chopped

1 Ripe avocado

1/4 cup Cucumber, diced

Juice of 1 lime

Salt and Pepper

Add all ingredients into a big bowl, then hand mix and squish avocado into spinach and kale until well mixed and avocado coats all of the leaves.

Enjoy and modify to your hearts content and enjoy the yummy.

COOKING TIPS

Add spices a little bit at a time. You can always add more but you can't take it back. This includes and is especially applicable to salt.

If you don't like an ingredient, don't eat it. Either leave it out, substitute it, or find a different recipe.

Don't be afraid to try new foods or ingredients. Even if you have never had Pho before it doesn't mean what you make (whether it turns out to Pho or not) won't be delicious.
