Banana Oat Pancakes

These pancakes are not only healthy they are delicious. They have an earthy, whole taste and are not too sweet. They are amazing with fresh fruit on top or just some powdered sugar!
This recipe comes from Autum Calabrese in her book Fixate. She is all about making better food choices but for those in search of deliciousness this food right here works for you too. It is super easy and way cheaper than Bisquick, all you need are the ingredients, a pan, and a blender.

Ingredients:
1 cup of unsweetened almond milk
2 large eggs
1 large ripe banana
1 tsp pure vanilla extract
1 tsp baking powder
1/2 tsp ground cinnamon
1 dash of salt
2 cups of old fasioned rolled oats
1/2 tsp of coconut oil
optional fresh berry topping
Instructions:
Place almond milk, eggs, banana, extract, baking powder, cinnamon, salt, and oats in a blender. Blend until smooth.
Heat oil in a nonstick skillet over medium heat.
Pour batter into skillet and cook 2 to 3 minutes and then flip.
Repeat with remaining batter.
NOTE: I also have a plant-strong verison of this recipe which I prefer:
Ingredients:
1 cup of unsweetened almond milk
2 Tbsp of unsweetend applesauce
1 large ripe banana
1 tsp pure vanilla extract
1 tsp baking powder
1/2 tsp ground cinnamon
1 dash of salt
2 cups of old fasioned rolled oats
Instructions:
I like to put the oats in the blender first and blend a little bit so the oats turn into a half oat half oat flour mix. Then I add the rest of the ingredients to the blender and blend until just mixed together, about 1 minute.
I pour the batter into an ungreased nonstick skillet and cook over medium heat. I cook them on a lower heat becasue the lack of eggs makes the cooking slightly different. The pancakes will brown but not really set up. As soon as they are brown and have heated through they will set up when they cool slightly.
I top with fresh berries or apples or powdered sugar.
