A note about my Green Salad

I have recently started adding fresh mushrooms to my Green Salad and they add a complexity to it that i can only describe as "flowery"? It's hard to describe but I love it.

So the new recipe is:

1 handful of baby spinach baby kale mix (or a half handful of each)

1/2 to 1 whole avocado based on your preference

1/2 to 1 whole lime, juiced again your preference

cucumber to taste

cilantro, about 1/8 cup for my taste

1-2 mushrooms, chopped

salt and pepper to taste

Add all ingredients in a bowl and mix with your hand, squishing the avocado onto the leaves and mixing thoroughly.

I have also been wondering about adding dill, I will let you know ;)

Add spices a little bit at a time. You can always add more but you can't take it back. This includes and is especially applicable to salt.

If you don't like an ingredient, don't eat it. Either leave it out, substitute it, or find a different recipe.

Don't be afraid to try new foods or ingredients. Even if you have never had Pho before it doesn't mean what you make (whether it turns out to Pho or not) won't be delicious.
